Years ago, as I sat on a plastic chair in the courtyard of this extremely rustic winery tasting the wines, one of the white wines stood out. The domaine had just been founded, and Matthieu and his wife had little more to show for themselves than a dilapidated building, a half-full cellar, big ambitions, and outstanding vineyards in the region. He explained to me that this wine came from the Les Abymes vineyard. Abymes means “infinite.” “That fits,” I thought as I sipped my glass.
Les Abymes is a cru vineyard in Savoie, where gnarled vines grow in barren limestone. The grapes are pressed in the winery's ancient basket press and then fermented in used barriques. The result is an aromatically complex white wine that both represents Savoie and reinterprets it. I was only able to secure a few bottles. Stocks are anything but infinite, so don't complain when it's gone again soon.
