A willingness to experiment is not always encouraged in the wine industry. In the “Old World,” strict regulations in certain appellations of origin such as Bourgogne AOC, German Quality Wine, or Barbaresco DOCG are intended to preserve traditions and sharpen the identity of a region, but the rigid rules do not suit everyone. One of those who has opted out is Luca von Arco, who has been classifying most of his wines as IGT Veneto for several years.
Quality is not an issue for him, as Pario demonstrates. Pario means “equal” or “balanced” because half of the Corvina, Rondinella, and Molinara grapes used in its production come fresh from the vine, while the other half are dried, as is customary in Amarone production. The fresh fruit and raisins manifest themselves in the wine in different ways. One half brings aromas of blackberries and cherries, while the other half contributes notes of dried plums and figs. On the palate, the wine is powerful and mellow with a long, harmonious finish.
