It doesn't always have to be Prosecco. This wine has enjoyed huge success in recent decades and is now synonymous with fruity, bubbly wines all over the world. But it is by no means without alternative and my suggestion has it all: Pignoletto.
Pignoletto is a white wine variety from the Emilia-Romagna region, the "stomach" of Italy, which is known for its culinary tradition. The origin of the name "Pignoletto" is disputed; the root is probably the Italian word "pigna", as the compact, elongated grapes are reminiscent of pine cones.
The Pignoletto grape variety has a long history and was first mentioned in writing in 1654 as "Uve Pignole". Today, however, it flies under the radar. However, winemakers with the right touch can produce excellent sparkling wines from it. At Cavaliera, the right touch for Lambrusco has long been proven and the white Pignoletto is in no way inferior to its red brother.
