Freshness is important. Freshness means life, even in wine. Capturing the freshness of a region and bottling it is the winemaker's task. In Savoie, this process may be a little easier, especially if you have the talent of Matthieu Goury. The young winemaker collects the cold mountain air of Mont Blanc in the French Savoie and produces fresh wines with a low alcohol content but plenty of expression.
The Apremont is one of his single-vineyard sites. The indigenous Jacquère grape variety grows here on stony soil. Work in the vineyard is only possible by hand, and the wines are given plenty of time on the lees in used barriques. This results in complex wines with alcohol levels below 12% that exude a lively freshness.
